Emmanuel Mollois

Emmanuel Mollois was born in 1969 in Blois (Loire valley). He completed an apprenticeship in cooking in Vendee then worked his way up through various restaurants in France. He spent five years working in highly rated gourmet restaurants in Paris, specializing in pastry making. He travelled the world before deciding to settle in Melbourne where he worked at La Brasserie in Toorak Road Victoria and The Willows on St Kilda Road. Emmanuel was head pastry Chef at the Loose Box in Mundaring which won numerous awards while he worked there. In 1999 he created the award-winning Le Paris Brest Patisserie Francaise in Perth’s hills before deciding to move closer to the ocean. He now owns and runs the Choux Café in Swanbourne – a small patisserie which was recently crowned ‘best in the west’ by the Sunday Times.

Ten Tiny Things on Wilderness Society shortlist
